With a unique blend of creativity and precision, Onóra Gill-Fitch plays a vital role behind the scenes at The Next Wave, managing operations and nourishing both the body and spirit through her exceptional cooking.

Originally from Dublin and raised on Ireland’s west coast, Onóra’s love of the sea and hands-on creativity has shaped both her professional and personal life. She studied Art and Design Education at NCAD in Dublin before moving to the UK, where she spent several years as a ceramicist and eventually became director of a design studio.

Onóra later supported students in the arts at Eastbourne College, combining her artistic talents with her passion for mentoring young people. Now back in Ireland with her family, she brings that same energy and warmth to Irish Gap Year—whether she’s managing logistics or preparing meals that make everyone feel at home.
